Featured Recipe: Ellie Kreiger’s Four Cheese Baked Penne
With a last name like Messina – you would assume that we eat a lot of pasta in our house. You would be right. I came across this recipe from Ellie Kreiger posted on CookingChannelTV.com for baked penne pasta – simple and yummy. It does take an hour to bake so be sure you have a little time before dinner or you’ll fill up on snacks waiting for dinner to get done.

I like to serve this with a salad of arugula, baby spinach and sliced pear, topped a few dried cranberries, raw almonds and a bit of vinaigrette.
